Coleslaw is a great side dish for “fried” chicken, especially if you’re already having a hot side dish to go along with it. Pop your sheet pan in the 400 degree oven and tell Alexa to give you a 30 minute timer.

Make sure the sheet pan is well oiled, because boy if it’s not, you’re going to have a grand time flipping them and getting them off the sheet pan….just trust me, it sucks. Rosemary is also nice with potatoes, my family just doesn’t care too much for it, but that’s okay! Use whatever spices/herbs you like! Toss the potatoes with the spices/herbs/oil in your SUPER BIG BOWL and then scatter them in a single layer on a large, OILED sheet pan.

Once your potatoes are all chopped up nicely in your bowl, time to give them some lovin’! Add in olive oil, garlic salt, fresh cracked black pepper and herbs (we used fresh dill and parsley). The bowl we used is clearly too big for the amount of potatoes we made, but again for mixing and incorporating ingredients together without making a big mess everywhere, this is a must.

Peeling red potatoes isn’t necessary – just get rid of the small roots or black spots, otherwise roasted red peels are quite nice and good for you.Īnother pro-tip, having an extra large bowl for mixing is amazing. Oh, hi Jax…looks like he’s ready to go! Onto step 2… preheat your oven to 400 degrees before you start chopping! Now, chop your red potatoes into bite sized cubes… we chop ours a bit smaller otherwise they’ll take twice as long to cook and that’s no fun. First step, we could always use more help in the kitchen so make sure you have a proper sous chef to help you! Sous Chef Jax Reporting for Duty! While your potatoes are cooking you have enough time to make the coleslaw from start to finish and prep your chicken to go into the oven so your chicken and potatoes come out at the same time…MAGIC!. I would highly recommend starting with the red potatoes as they take the longest to cook. This was definitely a fun dish to make and the best part about it, absolutely no pots were used in the making of this blog! If you have kids, I would recommend having them help out in making this one!Īll in all this recipe takes about an hour if we do it in this order. To go along with the chicken, we made some herb roasted red potatoes and chipotle coleslaw as side dishes. And no it didn’t disappoint! This is another nugget I’ve always seen on the internet but never got around to trying.
